It's Summer

It's summer...time to give the oven a break. I found a new easy recipe for dinner, just in time. What a fresh, delicious light meal, with an additional bonus, chocked full of "anti-accidents"(in the blueberries) as my great niece says.

 Blueberry Salad 

1 Tablespoon balsalmic vinegar
2 teaspoons grape jelly
1/2 teaspoon Dijon mustard
2 Tablespoons mashed blueberries
2 Tablespoons olive oil Salt/pepper to taste

3 cups shredded leaf lettuce
1 Tablespoon chopped chives
1 teaspoon chopped fresh basil
1 Tablespoon chopped red onion
1/4 cup fresh blueberries 1/4 cup walnuts
2 tablespoons crumbled blue cheese
1 cup cooked chicken, cut-up. *I use the roasted chicken from the grocery store deli.

 Mix 1st 6 ingredients to make dressing. Toss remaining ingredients. Toss with dressing and top with cut-up chicken.
