Almond Joy Cookies

I am going to post a recipe on Almond Joy Cookies.  Yes, they taste just like an Almond Joy Candy Bar.  Or if you would prefer the taste of a yummy Macaroon, just leave off the almond and the  chocolate icing.

But first....I saw this on Facebook today with the title of "You know you're old if you can recognize this." With summer approaching, it certainly does bring back memories.  I guess I'm old.  Crap!  Didn't want to admit that first thing this morning!

If you don't recognize it, leave a comment and I'll respond with what it is. If you do recognize it, we're meeting at the bar at 5:00 tonight to drown our sorrows of being older than dirt!

Now back to the Almond Joy Cookies-easy peasy recipe!

Almond Joy Cookies

2 3/4 cups of shredded coconut
2 egg whites
1/3 cup sweetened condensed milk
Whole almonds
Chocolate chips

Put in a food processor and pulse coconut, egg whites and sweetened condensed milk until the ingredients are mixed.

Drop by spoonfuls on parchment paper or greased cookie sheet.

Place a whole almond on the top and press down so it is secure.

 Bake at 350 for 12-15 minutes

Melt 6 ounces of chocolate chips with 1 teaspoon of milk.  Frost the cookies.

On another note....I took some time and mosied through the grocery store.  That doesn't happen very often.  Generally, I have my list, know the placement in the aisles, zone in, pick up the goods and I am out of there!

Look what I found!  Who knew marshmallows come in flavors?!

Green Apple and Strawberry

Fruit Flavors

Or what I could see as my downfall in hot chocolate; mint chocolate or chocolate flavors!

I also found Crystal Light "Mocktail" drink mixes.  No more lemonade for this girl, now it's margarita, mojito or appletini!

We're not in Kansas anymore!
