Lazy Summer Weekend

My Minneapolis kids are getting settled into a routine and new life.  Here are a couple of fun photos... The summer flowers are adding a little pizazz to the curb appeal of an already pretty home.

The first homemade dinner as Mrs.  Great job too! Yum!

The Houston kids had a fun weekend too. The luau left the Buckster all tuckered out!  Too many pina coladas?? I hear they made a pork tenderloin to die for.  I'll try it and pass it on later.

We had some unexpected dinner guests from our days in Maryland yesterday.  We had a great time catching up on all of our kids.

I made some couscous as a side dish people swooned over, so here is the recipe...


1 1/2 cup couscous
1 Tablespoon butter
1 1/2 cup boiling water
1/4 cup plain yogurt
1/4 cup olive oil
1 Tablespoon white wine vinegar
1 teaspoon curry (scant)
1/4 teaspoon turmeric
1 teaspoon salt
1 teaspoon pepper
1/2 cup grated carrot
1/2 cup chopped parsley
1/2 cup craisins
1/4 cup blanched almonds
2 green onions; thin sliced

Place couscous in bowl. Melt butter in boiling water and pour on top of couscous. Allow to sit for 5 minutes and fluff with fork. Add remaining ingredients and stir.  Serve at room temperature.  Can be made a day ahead of serving.
