Baked Potato Casserole

Ohhhh, you're going to like this one!

As you, my readers know, the Arizona sunshine has lured the out-of-staters here.  That means an open door at my house!

Here's a quick recipe you can do a few days before you serve it and it is "Marvey!"

Baked Potato Casserole

3 large white potatoes (Russet)
1/2 cup diced green onion
1/4 cup canned green chilies; mild
2 1/2 cups cheddar cheese; mix 2 cups in potatoes, reserve 1/2 cup for topping
2 teaspoons salt
1/2 teaspoon fresh ground pepper
1 1/2 cups sour cream

Bake potatoes and cool in frig. When they are completely cooled, grate, skin and all.
Add remaining ingredients and mix together gently.
**This is where you can cover the pan with plastic wrap and refrigerate for up to 2 days.
Place in 9x9 glass baking dish. Bake at 400 for 30 minutes or until cheese is bubbly and golden.

**Variation #1: You can fry 2 slices of bacon, crumble, and garnish with this as well, before baking.
**Variation #2: If you have any canned onion rings, sprinkle a few of these on top.
