Green Chili Pork Stew

On this cold night in February, I found this recipe and ZOWIE, it was good!

Green Chili Pork Stew
2-3 pork chops; cut in small cubes
olive oil
2-3 cloves of garlic
salt and pepper to taste
1 package of frozen corn
1 package of creamed spinach
1 1/2 c sliced carrots
1 can white beans
1-4.5 ounce can green chilis
1/2 tsp. cumin
10 drops Tabasco
Fresh Cilantro

Brown pork and chopped garlic in olive oil.  Season with salt and pepper.

Add spinach, carrots, corn and green chilis.

**Add white beans OR for thicker stew, put beans in blender and puree, then add.
Season with cumin and Tabasco.  You can add more Tabasco, depending on taste.

Simmer for 15-20 minutes, serve and top with chopped cilantro. I served it with warm corn bread. :)

It's all relative~it was 36 here this morning, that's 30 degrees below normal. Not to worry, it will be perfect when you get here! :)
