Fish For Dinner

Last night I made fish for dinner. I have vowed to eat more fish, laying off the beef for awhile.  Not that I have anything against beef, just thought we needed a change.

Truth be known I didn't feel like making dinner.  Do you ever feel like that?  You're too tired to eat out and too tired to cook?  What do you do?

But I had fish thawed out, so fish for dinner it was. I had some leftover tortilla chips, you know the 1/2 inch pieces at the bottom of the bag, sitting on the counter from a previous mid afternoon snack by someone. So I put them in a baggie, rolled them into fine crumbs with my rolling pin, added about a teaspoon of Old Bay Seasoning and fried them.. Shock!  It was a darn good combo. The fish was delish.

I think I've added one more ingredient to my island must have bag.  You know, that question, if you were on a deserted island what would you bring to cook with?  I would bring butter, brown sugar, garlic and Old Bay Seasoning! I know you've been dying to ask me that question!
