Lobster Salad

As I mentioned there was a heck of a deal on lobster, so when I bought some earlier, I bought enough for a good lobster salad.

Lobster Salad
1/2 cup mayonnaise
1 teaspoon olive oil
1 teaspoon balsamic vinegar
8 ounces of spiral pasta
8 ounces cooked and cubed lobster
1/2 cup broccoli
1 Tablespoon chopped onion
1/4 cup chopped celery

Mix together and refrigerate. Serve on curly leaf lettuce. Serve with crusty bread, a good glass of vino and voila! Great summer dinner.

**You may have noticed I used the beautiful tri-color bowtie pasta.  I couldn't resist as I bought this in Rome, Italy last January.  It was such a fun reminder of a great trip!
