Engagement Party


Time for a party...It's an engagement, it's Cinco De Mayo, who cares, it's party time! Thanks Kristen, a good time was had by all!
Great margaritas-Ole!

When was the last time you had a full-fledged taco bar?  YUM!!!
Si, muchas cervezas!
Did I mention tequila cupcakes? Oh yea. Don't judge, they were outstanding!

Here's the recipe...
Margarita Cupcakes with Lime Buttercream Frosting

Cupcakes:

9 oz liquid margarita mix (lime or strawberry)
3 oz tequila
3/4 oz Grand Marnier
1 box white cake mix
3 large egg whites
2 tablespoons vegetable oil

Frosting:
2 sticks unsalted butter (1 cup)
5-6 cups powdered sugar
2 tablespoons freshly squeezed lime juice
1/8 teaspoon salt
Course green or pink decorators sugar
Optional: candied lime wedges cut in half (garnish)

1) Preheat oven to 350 degrees
2) Mix together margarita mix, tequila, and Grand Marnier. Set aside 1 1/4 cups. Pour the rest over ice and enjoy.
3) In a large bowl blend cake mix, egg whites, vegetable oil, and 1 1/4 cups margarita mixture. Blend on low for 30 seconds and increase speed to medium. Blend for 2 minutes. Batter will be slightly lumpy.
4) Line two cupcake pans with cupcake liners and fill each half full.
5) Bake for 20-25 minutes or until golden brown (should be able to pull toothpick out with no batter on it)
6) Beat butter until fluffy, and then add 5 cups powdered sugar, salt, and lime juice. Mix until creamy. Add up to an extra cup of powdered sugar until desired consistency.
7) After cupcakes have cooled, pipe frosting onto cupcakes and roll edges in colored sugar to resemble a salted rim. At this point if you have the candied lime wedges you'll want to put one near the edge of the cupcake.
