Do you love bacon? Everybody must love bacon. Infact there is a whole cult following of bacon. They even have bacon bandages, bacon flavored breath mints and bacon wall hangings. Oh, but I digress....
Years ago, people wrapped bacon around just about anything and called it a canape or appetizer. There was bacon wrapped water chestnuts, bacon wrapped chicken livers, bacon wrapped scallops, and bacon wrapped shrimp. I just read a new one and had to try it...bacon wrapped dried apricots. I figured the sweet taste of the dried apricot and the salty flavor of the bacon could be a delicious blend. It was good. I would mix it on my platter with something crunchy like the bacon wrapped water chestnuts. For all of you newer cooks or for those of you with limited time, remember to bring the bacon (wrapped anything). It's tasty and looks like you put some work into it, when in reality it takes about 5 minutes and costs very little.

Bacon Wrapped Dried Apricots
Cut bacon in 1/2.
Place one or two dried apricots (depends on how large you want the bite)on top of each slice. Roll until firmly wrapped around apricot. Secure with a toothpick.

Place on a cookie sheet and bake at 375 for 10 minutes or until bacon is brown and crisp.

Voila! A taste treat!
