Chicken Salad


Chicken Salad is an all time favorite at our house. It's so easy when you have a couple of chicken breasts or leftover chicken or turkey.
Chicken Salad
2-3 cups cooked cut-up chicken
1/4 cup chopped onion
1/3 cup chopped celery
1/2 cup red grapes; halved
1/4 cup craisins
1/3 cup chopped pecans
1 cup mayonnaise
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon celery seed
Add dry ingredients to chicken in a large mixing bowl. Top with seasonings and add mayonnaise to taste (your personal preference may be a bit more or less). Chill and serve on lettuce leaf. You can garnish with a few craisins on top, or coarse ground pepper.

***For seasonal variation on this; add 1/2 cup chopped red apple. 3 teaspoons of olive oil, 1/2 cup plain yogurt and 3 Tablespoons of Dijon mustard can be substituted for the mayonnaise.
