Caramel Sauce


The autumn breezes bring those warm thoughts of caramel apples and caramel flavor, in general. This afternoon, I decided to mix up a batch of homemade caramel topping for ice cream or flan. It is actually very easy to do, and oh, so, yummy!
What is amazing to me, is from plain, old white sugar, you can have this delightful taste treat within minutes!
Besure you have all of the ingredients assembled before you start.
In a 2 quart pan, melt the sugar, stirring almost constantly. When the sugar starts to melt and caramelize, the possibility of it burning in an instant is there. The secret is to watch and stir.
As soon as the sugar is melted and is a nice, golden brown, add the butter and stir until it is all melted.
Turn the burner of, leaving the pan on the burner. Add the cream and vanilla. Stir for about a minute, then allow to cool somewhat. Warm caramel on ice cream will melt a heart!
Caramel Sauce
1 cup granulated sugar
6 Tablespoons of butter
1/2 cup whipping cream or 1/2 and 1/2
1/2 teaspoon vanilla
