Bean Soup

A friend of mine gave me a ham bone. I know why she gave me a ham bone. She doesn't cook and she was hungry for bean soup. I must admit bean soup isn't my favorite; I love to eat it,the richness of the broth, the robust beans and salty ham. The after effects....not so much. It's autumn though, or soon to be autumn, so I decided to make the bean soup. Thanks to my friend, Liz, the all round great homemaker, shared her tricks with bean soup that I tried, m-m-m, good idea (add a garlic clove and bay leaf).
Soak the beans. I used Northern Beans. Change the water every couple of hours. I soaked these for about 4 hours.
Chop up some vegies. I used about 1/2 cup each, celery, carrots, onion, one clove of garlic and the bay leaf.Put that in the pot with the ham bone and simmer the 4 hours while the beans are soaking.
Add the beans to the ham stock and cover with water plus about two inches for broth, adding water as necessary as the beans will continue to hydrate.
Add a salad and glass of milk and voila! there's your hearty and delicious dinner.
