Sugar Cookies

Cupcake Bakeries are popping up like crazy around here. I don't know about you, but I can't quite pay $3.75/cupcake. Along with the cupcakes are cookies, iced with powdered sugar icing and YUM they look good. They are a mere $3.50 each. I think the cookies are even better than the cupcakes, although the Red Velvet Cupcakes are tempting. Today I felt like baking cookies. Can't you just taste this treat with hot coffee? What a decadent gift for the family.
So on with the sugar cookie making. I generally bake these at Christmas, but what a production. I decided they really aren't that bad to make, if you don't have to make 100 cookies!

Sugar Cookies
1/2 cup butter
1/2 cup sugar
pinch of salt
1 large egg
1 Tablespoon of corn syrup
2-2 1/4 cup of flour
1 teaspoon of vanilla
Beat sugar and butter. Add egg and mix in corn syrup and vanilla. Beat in flour, a cup at a time. If dough is soft, refrigerate one hour. Roll 1/4 inch thick. Cut out various shapes. (Here's a secret, if you use powdered sugar instead of flour when you roll these out, they won't taste so "doughy"). Bake at 375 degrees for 10 minutes or until they just start to turn brown.

Powder Sugar Icing
1/4 cup butter
2 cups powdered sugar
2 Tablespoons marshmallow cream
1/4 teaspoon vanilla
1 Tablespoon milk-to desired consistency
