Alaskan Salmon


WOW! I was so lucky yesterday. Right after I logged off my blog post for Memorial Day a friend called and said he was on his way to the airport to pick up some FRESH salmon, sent by a mutual friend who lives in Alaska and has a seafood processing plant, called Copper River Seafood. Don't you love the name? It even sounds like some cold Alaskan stream, I can see the salmon jumping now. My mouth watered until the salmon arrived. My tastebuds threw a fireworks display. WOOHOO!
Until recently Copper River Seafood sold to the hospitality industry, hotels, restaurants and the like. Now you can log onto their website and order these incredibly delectable treats yourself. YUMMY!

I decided to grill the salmon, but couldn't make up my mind on how to prepare it, so I cut it into three pieces. The first, I used liquid smoke, so if there was any left over I could use it on a smoked salmon Caesar salad. The second, I grilled with just a little season salt, then at the last minutes I brushed some molasses on it to give it a crisp sweetened crust. The last one I was a purist on, and used simply lemon juice and sea salt. Foxtrot Freddie liked the purist version, I liked them all.
Served with a strawberry/spring greens salad, rosemary oven roasted potatoes and fresh green beans, made quite the taste treat for wrapping up a long, fun weekend.
