First Day of Spring


Happy First Day of Spring!! "Chirp, Chirp" That is for the first sighting of robins in your area-it's good luck you know.
It's time to fill the pieshell we made yesterday. I actually did it the same day, but it the blog post was too long to put on one page. I have to thank my Mom for this recipe, it's been given to her by her mother. (Well, the meringue recipe is mine, not sure they had marshmallow cream back in "the day").

Lemon Meringue Pie
Use baked pie crust.
1 1/2 cup sugar
3 Tablespoons flour
3 Tablespoons corn starch
1 1/2 cup water
In a medium saucepan, mix the dry ingredients, then add the water slowly. Use whisk to mix, bring to boil. Turn down heat to simmer for one minute. Mixture will thicken.

Separate 3 eggs. (Save the whites for the meringue.)
Gently beat the 3 egg yolks
1 Tablespoon salted butter
Zest from one lemon
1/3 cup lemon juice **Microwave lemon in baking dish for 20 seconds to get maximum juice.

Mix the lemon mixture slowly into the thickened corn starch mixture. Heat to boil, stirring constantly. Pour into baked crust.

Meringue
Beat the 3 egg whites until they form stiff peaks with hand mixer. Add 1/2 teaspoon of Cream of Tartar. Add 1/2 jar marshmallow cream and beat until smooth. Spread meringue over lemon filling. Seal the edges as meringue can shrink while it cooks. Bake at 350 degrees for 12-15 minutes or until meringue browns.
Allow to cool before serving.
