Cake Recipe

A little dessert after a good meal is frequently a welcome pleasure. However, I don't often make dessert because I don't need a whole cake, or pie or an entire batch of cookies sitting around getting stale or perhaps worse, tempting me to overindulge.
I learned something dangerous the other day. It is how to make just a few cupcakes using only 1/3 of the cake mix. This results in only about 6-8 cupcakes. YUM!
Here you are. Enjoy!

1 1/3 cup cake mix
1/3 cup water
2Tablespoons of oil
1 egg.
Fill cupcake tins 1/3 full. Bake at 375 for 17-20 minutes.
Save the remaining cake mix in an airtight container for another day.
**If you are using a chocolate cake mix, fold in a few chocolate chips, if you are using a lemon cake mix; use some fresh lemon juice for part of the water and add a little lemon zest, carrot cake mix; fold in some grated carrots, you get the idea...
